Ibiza is a great place for MTB.. It’s not as hot as southern spain lots of variety of trails and scenery.

Can highly recommend http://www.andaluciancyclingexperience.com/index.html for the road, not tried them on the MTB yet though.

Seasonally Unadjusted were superb for this – not sure they are still going, but recommended if so.

Have you looked at Graham Baxter and his Sporting Tours ? He is based near Murcia which has some great terrain, and is Alejandro Valverdes neck of the woods. Cheap flights to Murcia too.
