5700 to 6700 brake difference is the same as with the rear mechs. No appreciable difference when new, but slightly higher quality hardware on the Ultegra means it will keep performing well for longer. At only £7.50 per caliper more, I’d buy the Ultegra.
6800 calipers are a whole new kettle of (extremely powerful!) fish though.
Campag calipers do work very well as cynic-al says, normally better than their Shimano equivalent. BUT… They don’t have any form of opening mechanism on the caliper (it’s on the lever on Campag) so you can’t really use them with Shimano shifters unless you deflate the tyre first each time when you remove a wheel. Might not be an issue if you’re running 20c tyres, but as most people are moving from 23’s to 25’s now, it would matter.
