Old Boy Is truly amazing
Also check out Brotherhood which is korean and puts Private Ryan to shame.
Internal Affairs , Itchi and Battle Royale.Not Asian but City Of God is probably my favourite all time movie and closer to home Life is beautiful and Amelie are stunning.

Bad GuyKim ki Duk is a good starting point for your Korean stuff, somebody like Miike for the Japanese films

Uzumaki is worth a look.
If you liked Old Boy then Park-chan Wook's Sympathy for Mr Vengance and Sympathy for Lady Vengeance should be on your list to complete the trilogy.
Anything by Takashi Miike is certainly "quirky"... try Audition to start with and if you like that go for Imprint.
Three Extremes made me permanently wary of Dim Sum and I wouldn't recommend it to anyone

Another one for the "other quirky foreign" pile: Yozhik v Tumane
It's a Russian animation from 1975, very basic, but hauntingly beautiful. I just wish I could find a non-YouTube, high quality version of it.
