    Do you not loose a lot of the benefits of having a fat tire (say 2.5") if you have to over-inflate it, to stop it folding over if your rim is narrow (17mm for example)?

    It's more the profile will be wrong and probably easier to roll it off, regardless of how much you inflate it.
