I’m thinking that a wiki might be the best way I can manage some content for a project. No need to be online (in fact, I don’t want it online). So a personal piece of wikiware would be cool. But can’t find anything decent.

    Can anyone recommend anything?

If you don’t want to share it (I’m assuming that from the not wanting online comment) why do you want the collaborative tools of a wiki?

I’m not really sure what you want, but perhaps VoodooPad is the answer?
