top tip

grease your frying pan using “spreadable” butter (real butter with a bit of verg oil added, not low fat spread)

just rub a bit on before you cook each pancake using a scrunched up bit of baking paper

works a treat – perfect amount of grease, buttery taste – but the veg oil stops it burning

I’m going to stir fry some king prawns and veg in blackbean sauce and put that in the pancakes.
