Numpty question here as I've only just got a bike with discs 😳
If I want to put a 180mm rotor up front instead of the 160 fitted, is it just a case of changing the caliper mount to a post to IS 180mm mount ??

Depends on the type of caliper and fork – but if the calieper is post mount and the fork IS mount then yes

Why do you want to do it tho? Is it really needed?

Yes, if you've got new(ish) calipers that are post mount, with a removable mount to fit them to the fork, then just replace this with the larger 180mm equivalent IS to post mount (or if you have a rear 160mm one knocking around they do the same job on the front!).
