Airvideo:

Small app on computer will convert and stream any video to your iPod on the fly. Free version isn't even that limited

Does airvideo allow you to watch flash stuff too?

It will play FLVs ie the video file you can extract from youtube etc, but then again the ipod comes with a youtube app
