Never confident cooking beef. I like it pink, but family would like it nuked from space.

beef should be cooked no higher then 70 C time obviously depends on weight but at this temp you are looking at 20 hrs for say a 3 rib joint.
at this temp the enzymes break the long protein chains down without causing the muscles to contract.
pink all the way through with no hint of rare
and a sticky outer crust that tastes like french pastry
20 hrs cooking may seem like a faff but its much easier cos you just shove it in the oven and come back the next day and the margin for error is much bigger.

Until you have eaten organic meat from a red poll herd, you can't be sure you have eaten the UK's best roast beef.
Well worth seeking out. Rib roast joint of this ilk last Christmas dinner was the nicest beef I have ever cooked.

Soz Ton but 180c for beef is cremation. My butcher reckoned 'about 100c, for ages'
