    I have a M4 brake set currently running a set of 180mm discs (f&b)same as these:

    Now could I use these 180mm rotors with the new series of Hope brakes that run on 183mm rotors like these:

    I fancy a change/more adjust-ability re the brakes but don't fancy shelling out another £44 on rotors 3mm larger

    Seriously??

    all that would happen is an extra 1.5mm of the pad surface would remain unused on the new system , you could probably remove 1mm of spacers if the brakes are on post mount to bring the calipers down to bite more of the rotor.

    The new rotors wont fit in the old calipers if they are ISO mount. Well, not until you take a wetstone to the outside of the rotor whilst it spins! Non issue going the other way.
