I cant find the recipe online, but its from Sue Lawrence’s Scottish Kitchen
4 1/2oz of butter, either salted or unsalted
2 1/4 of Granulated golden sugar – white is fine too
1/2 pint of full cream milk
pinch of sea salt
7 floz of Condensed milk
3 1/2 oz of broken white chocolate
Teaspoon of Cardamom crushed seeds.
Option add handful of chopped walnuts and cranberries.
Melt butter slowly in heavy saucepan.
Add sugar, milk and salt, stir till dissolved. Bring to boil, simmer of fairly high heat for 8-10 minutes, stirring often.
Add the condensed milk, chocolate and Cardamom if using. Simmer for 8-10 mins over mid to high heat, stirring constantly.
Remove mix from heat, add fruit and nuts,then beat by hand for ten minutes until slightly grainy.
Pour into buttered 9 x 13 inches buttered tin. mark into squares.
