    Today we had pot roasted pheasant with cider, bacon and savoy cabbage. Not had pheasant for a few years but this was a real hit today. Also had some great pale ale from the Tempest Brewing Company in Kelso.

    Pork shoulder on boxing day. Smoked for 8 hours on the BBQ. Started cooking at 6, but well worth it!

    Pan fried Peruvian Albatross livers in a Blow Fish & Hermit Crab Savoi d’ Aubergine reduction, served on a bed of thrice fried crispy deep-sea Kelp stems drizzled in Almond butter & Yak Milk sauce.

    Highlight would be the family lunch with my kids (many thanks to the gf who did most of the work)

    Amuse bouche: Parsnip puree with truffle
    First course: Artichoke and Asparagus Risotto
    Main coursex2: Wild Mushroom pie, Courgette, tomato and goat cheese pie
    Cheese: numerous, bought in France the weekend before
    Desert: Mini Tirmasu

    We didn’t have room for mince pies or Panatoni …

    Roast goose with gooseberry sauce. Mmmmm. First time I’ve cooked goose. Much nicer than turkey but takes a bit of effort to sort all the fat out.

    Christmas dinner was awesome, but I’m really looking forward to a recipe mrs nobeer has for putting the leftover pigs and also the stuffing inside wee Yorkshire puddings! 😯
