    Got some lovely cod to go in a curry – do i cook it before it goes in the sauce or will it cook in the sauce?

    aye. Fish cooks quickly and you don’t want it overcooked

    put it in at the last moment, cook it for too long and you’ll never find it, just enough to warm through and pull some flavour in

    you can’t undercook fish

    Either way. If you want it to break up a bit and get all mushy, cut it into cubes and put it in raw. (That’s how I do it with a coconut milk based fish curry – although I use coley as its’s cheaper and just as tasty in curry).

    Otherwise gently fry the fish (maybe in garlic) then slide it into the sauce for a final amalgamation.
