    How would you do it ?

    Fishmonger cut head/tail and fins off.

    Going to be cooked in the top oven as there will be a 2kg chicken in the main oven with all the trimmings.

    Lunch for 12 sitters tomorrow !

    Wrap in foil, with some dill and seasoning and poach in the dishwasher.
