seem to remember leaving a multi pack of cadburys in the van for a weekend of cold days, it got a white bloom on it, sent it back to cadburys who sent me quite a few quids worth of vouchers, they said it was cold bloom or something similar.

Chocolate is supposed to melt in your mouth. If it’s too cold, you end up crunching it.

I worked as a chocolatier for 5yrs till very recently, making handmade chocolates and tempering chocolate on a daily basis so for once in a thread on stw i am qualified to respond without question to my knowledge – chocolate should not be stored in the fridge as the oils can separate and lead to what is known as blooming which may lead to a granular affect in the mouth on returning to room temperature, it should be stored in a cool place away from strong odours and in a sealed container as exposure to oxygen degrades the texture and temper or snap of the product.

What kind of lunatic puts chocolate in the fridge?!

No. The problem is that a lot of what we consider chocolate has a very high sugar content and putting this mixture in the fridge deadens the flavour of the sugar. Try eating a bar of melted chocolate, you probably I’ll find it too sickly, despite it being exactly the same as the refrigerated example.

It never occurred to me there was such a job as chocolatier, until just now. I’ve missed my vocation in life :-/

    People ‘store’ chocolate?

    Freaks.

I can usually barely make it out of the shop.

Chocolate melts at body temperature, that’s what makes it sexy. Thats the point. Don’t keep it in the fridge, but dont keep it in your pocket either.

That said a lot of chocolate bars are only really chocolate coated, so the fridge maybe improves the filling, I have a friend who eats creme eggs frozen, otherwise they’re too sweet.

seaurchin01 : It sounds exciting but the reality was anything but after 5yrs, i worked here, @ the cocoa bean co on the A75 and made stuff (all hand made) for john lewis, waitrose, harrods, royal yacht, specialist delis, boots etc along with specialist intricate work using chocolate with various cocoa content from 27% ,white chocolate, not considered a chocolate through to specialist 90% cocoa content dark chocolate with a kick like a strong espresso – strange thing is i don’t really like chocolate 😉

I now work in a bike shop here and i should’ve done this years ago – very happy indeed 😀

75% or above is what comes into my house most often. It’s highly unlikely to melt so never needs to go into the fridge.

According to both sisters in laws though my house is cold anyway, cheaper on heating that way though!

    Not in the fridge.
A good quality chocolate should have a snap to it anyway and melt quickly in the mouth.

Oh Lordy I want some now.

Holy crap! Talk about taking the fun out of the experience!

Look I like my chocolate crisp and cold hence it goes in the fridge. Don’t tell me how I should be storing it and tasting it for christ’s sake.
