It’s for a new Sram CX1 Set up.

I have a 40t up front and CX1 Long cage rear at the back with a XT 11 speed 11-40T cassette. The last 2 chains I’ve brought were both 116 link and that was using a 30t at the front, I didn’t take any links out of the chain and it was fine but will a 116 link chain work with this ration or do I need something bigger?

You didn’t take any links out, but you could/should have.

114 or 116 (as standard) will be absolutely fine with that set up. Take the time to do it right, rather than just sticking the whole chain on as supplied.
