Bearings I use whatever I have, could be expensive bike stuff in a small pot or cheap car stuff in a large can.
Bolts, to stop them seizing? Copper slip stuff.

Free range goose fat is better than “proper” grease IME.

Lithium grease I’ve read some say will harm stuff like o-rings.

Bolts – small torque I’d use thread lock to keep them in place. High torque, maybe copper grease to aid removal. Copper grease needs to be kept away from some stuff (seals I think).

General bearing grease, I’d use marine grease as is particularly good at keeping water out.

In a freehub I’d use a light oil rather than grease.

Chain – oil or wax lube, not grease.
