    Eggs Benedict for me too.
    For years whenever my wife asked want I want for breakfast I always said Eggs Benedict and got a hollow laugh in response, then one birthday she actually made it. With a cup of strong coffee it’s perfection.

    The beans were Heinz reduced salt and sugar which really does reduce the taste. I’m swapping back to proper ones.

    I agree, a good squirt of tommy k mixed in before heating and they taste like normal.

    Eggs Benedict for me though, preferably in the pig and pastry on Bishy Road in York. Unfortunately it’s an hour’s train journey away.

    Weekdays: coffee or pancakes with bacon and maple syrup.
    Weekends: corned beef hash with three strips of bacon and a poached egg on top.

    Sorry just seen this – dip the brioche slices into a beaten egg (or two, 3+ slices will need more) with a splash of milk to make it less eggy if required, with some sugar mixed in (cinnamon works well in here too). Fry in butter & you’re golden

    If its a mackies the bagels are way better you get scrambled “egg” rather than the weird dried out disk of egg

    Good call on the bagel egg. Though I do find the bagels have a density of approx 12.4g/cm3!

    It used to be my Mum’s proper Stoke-on-Trent oatcakes filled with bacon, melted cheddar and a choice of fried mushroom, tinned tomatoes, eggs etc …

    Unfortunately I don’t live anywhere near Stoke anymore and you just can’t get proper oatcakes anywhere outside Staffordshire.

    Basically a scallop wrapped in a piece of the thinnest bacon you can buy and grilled (or BBQ’d in the summer). 4 is enough, but I find them so more-ish that 6 would not be an issue. You can go all fancy pants with avocado on fresh toasted sourdough or rye bread etc, but I’m happy with just the scallops and bacon.

    Alternatively, avocado on toast, with a poached egg, some overcooked (re crispy) bacon sprinkled on top and some wilted/blanched spinach to garnish.
