I copied Alpkits instructions and made one of the saddle bags very quicky the night before a recent trip. It worked quite well but I had to pack it carefully so it didn’t rub on my legs. I just used velcro to fasten it to the saddle rails and seat post and a bungeecord was essential for security.

I also made a framebag (just figured it out as I went along) which worked really well. I got a heavy duty zip and some rucksack material, and 5cm velcro to attach it to the frame.

I just bought it from the local outdoor equipment repair place, but you can buy it over the internet. Something like this:
    http://www.profabrics.co.uk/snap_product_search.php?search=true&category=Fabrics
has a range depending on what colour/weight you want. Or search on ebay.
