like the look of the sweet and sour one…
here is my ingredients list, all of them may or may not get used and there is seldom any measuring!!!
Dry rub: Paprika, smoked paprika, chilli, cumin, salt, pepper, dried oregano, dried rosemary, dark brown sugar and dried garlic powder (
this is used on all meat prior to slow roast in oven or bbq use whatever you don’t put on the meat as the base for the sauce)
to this add
HP sauce
tomato sause
bourbon or whatever whiskey you have
beer (whatever is in the hand!)
fresh chopped garlic
fresh chilli (leave whole for flavour rather than heat)
sugar
honey
hendersons relish (king of table relish)
soy sauce
coke/cherry coke
water
mix as much or as little of it all together in a pan, add the water and simmer, stirring a lot so it doesn’t burn. keep tasting so that it gets to where you want it to. pass through a fine sieve and cool ready to use on the meat or as a dip….
