    So whats your best recipe for a homemade bbq sauce?

    Interested in this, especially if the recipe doesn’t include the use of another pre-made sauce, which most seem to be.

    I can recommend Country Delight Hickory Smoked BBQ sauce, if no ones got recipes.

    Mine is very unscientific

    A random combination of some or all of
    Ketchup/tinned toms
    Sugar/honey/maple syrup
    Soy sauce
    Worcestershire sauce
    Something hot like cayenne or Tabasco
    Lots of salt and pepper
    Maybe garlic or garlic powder
    White wine vinegar

    Usually end up making a massive amount as I tip more and more stuff in until it tastes nice!

    1/2 cup vegetable broth
    2 tablespoons pure maple syrup
    2 tablespoons molasses
    2 tablespoons tomato paste
    2 tablespoons peanut butter
    1 tablespoon soy sauce
    1 tablespoon apple cider vinegar
    1 tablespoon prepared mustard (I use Dijon)
    1/2 teaspoon liquid smoke
    1/2 teaspoon Sriracha hot sauce

    Buy chipotle chilis from eBay, dried, make thomasina Myers’ chipotle en adobo sauce, keeps in the fridge for months, smoky, sweet, hot as ****. Brilliant stuff.

    Interesting question.

    I’ve made my own ketchup and (veggie) Worcestershire sauce from scratch with reasonable success, never thought to try barbecue.

    What wrong with ASDA?

    Got to admit though I’m a little disappointed, after all the fuss people made over them as an ingredient, they do taste like ‘BBQ sauce’. So if I was making BBQ sauce they’d be the starting point.

    The one in Jamie’s American book is fantastic

    His ribs recipe is, again hard work, but the ribs are bl£@dy brilliant

    A bit of a faff to make, but make loads and bottle it..

    sweet and sour bbq sauce

    1 tbsp grated ginger
    1 tbsp ground nut oil
    4 cloves of garlic
    1 tbsp brown sugar
    2 tbsp soy sauce
    1 tbsp white vinegar
    1 tsp chinese 5 spice
    1-2 tbsp red wine
    1-2 tbsp tomato purr
    worcestershire sauce
    (optional chilli powder for a spicey variation)

    hand blender
    marinate the meat for about a day

    like the look of the sweet and sour one…
    here is my ingredients list, all of them may or may not get used and there is seldom any measuring!!!

    Dry rub: Paprika, smoked paprika, chilli, cumin, salt, pepper, dried oregano, dried rosemary, dark brown sugar and dried garlic powder (
    this is used on all meat prior to slow roast in oven or bbq use whatever you don’t put on the meat as the base for the sauce)

    to this add
    HP sauce
    tomato sause
    bourbon or whatever whiskey you have
    beer (whatever is in the hand!)
    fresh chopped garlic
    fresh chilli (leave whole for flavour rather than heat)
    sugar
    honey
    hendersons relish (king of table relish)
    soy sauce
    coke/cherry coke
    water

    mix as much or as little of it all together in a pan, add the water and simmer, stirring a lot so it doesn’t burn. keep tasting so that it gets to where you want it to. pass through a fine sieve and cool ready to use on the meat or as a dip….

    Never seen them in a supermarket, I buy em from eBay, as nowhere locally sells them.

    In answer to your question, it’s full of fat women in onesies, and fat men with tattoos buying cases of fosters. 😀

    A good dollop of muscavado sugar, splash of vinegar, boiled onion paste (blitz an onion in a food processor & fry really slowly in clarified butter until it stops giving off steam), ginger (a bit – grated), dark soy a splash, rind or an orange (use a vege peeler so there is no pith, a teaspoon of english mustard powder and a mix of star annise, fennel seed and cumin. Add a good glass of orange juice and water. Add chilli to taste & simmer until it is syrupy (disolve the sugar before bringing to the boil).

    While this is happening marinade the meat in brine infused with bay, star annise, fennel & cummin. When the sauce is ready pat meat dry and marinade in half the BBQ sauce. Baste the meat as it is cooking with the remaing sauce.

    This is the recipe I use for BBQ sauce.
    It has Brewdog Cocoa Psycho in it, but you can try other beers with coffee or chocolate flavours. I’ve done it with Hobgoblin and it came out nice!

    Yields about 3 litres. Last for ages though as the alcohol works as a preservative – not all of it gets boiled off.

    4 cups tomato paste (825g)
    2.5 cup molasses (450g)
    5 tsp garlic powder (25g)
    15 tablespoons/1 cup cider vinegar (225ml)
    15 tablespoons/1 cup Worcestershire sauce (45ml)
    7.5 teaspoons/2.5 tablespoons paprika (75g)
    4.5 teaspoon/1.5 tablespoon freshly ground black pepper (16.25g)
    1.25 teaspoon celery salt (normal sea salt) (5.75g)
    1.25 teaspoon cayenne (5.75g)
    2.5 cup Cocoa Psycho (500ml) (1.5 bottles)

    Chuck in a pan, bring to boil while stirring.
    Drop heat and simmer covered for 45 mins.

    I used to have a wee gourmet hot dog cart. We used to do a BBQ at the Brewdog bar in Edinburgh every weekend. Everything we did had Brewdog in it – had the sausages made up with them and put it in all the sauces. Was good fun.

    The syringe was for injecting beer into the sausages when they were cooking. Just if you’re wondering like.

    these are the base ingredients i use…the quantities of each varies depending on how much is being made and how spicy/hot it needs to be

    For Ribs…

    Makes. 6 cups
    Takes. 45 minutes even if you take a phone call.
    Keeps. Because it has a high acid and sugar content, it can keep for months in the refrigerator.

    Ingredients
    2 tablespoons American chili powder
    1 teaspoon ground black pepper
    1 teaspoon table salt
    2 cups ketchup
    1/2 cup yellow ballpark-style mustard
    1/2 cup cider vinegar
    1/3 cup Worcestershire sauce
    1/4 cup lemon juice
    1/4 cup steak sauce (or brown sauce)
    1/4 cup dark molasses
    1/4 cup honey
    1 teaspoon hot sauce
    1 cup dark brown sugar (you can use light brown sugar if that’s all you have)
    3 tablespoons vegetable oil
    1 medium onion, finely chopped
    4 medium cloves of garlic, crushed or minced

    AWeeesome ribs does cost a bit to make though!

    not really a bbq sauce as such but a really basic tandoori marinade is lovely on chicken breast (really nice with sparkling plonk)

    1 tbsp fresh grated ginger + chopped garlic (or the stuff in the jar)
    1 tsp ground cumin
    1 tsp ground coriander seed

    marinate the chicken for 12+ hours stick on the bbq

    I like the random tour de larder sauces. Other things I add are a splash of orange squash mustard powder powdered ginger and a dollop of peanut butter.

    Depends on the meat.

    Lamb kebabs – Mint, Olive oil, Lemon, Salt, Pepper. Leave over night.
    Chicken id a mich mash of what I have – Soy Sauce, Tommy Sauce, Mustard, Pepper, Salt, Chilli flakes, Henderson’s Relish, Sugar.
    Ribs – Ginger, Lime, Sugar, Chilli, Red Current Jelly, Coriander.

    As BigJohn says, what you got is all good. Longer to marinade the better.

    Hmmmm, no I’m very hungry.
