We’ve had our Trimco Zurich serviced and the man activated an automatic defrost mode. Previously we just turned it off ourselves if it was frosting up. Now it’s turning off every 6 hours which isn’t the best with the weather as it is.
Can I make it manual again?

Easily programmable. From a distant memory, they give defrost intervals in hours, so would be set a t 6. If it’s not opened often, intervals of 12 would probably be fine. Defrost periods really depend if it’s off-cycle or has a heater. Do keep a regular defrost cycle in though, it will improve efficiency, reliability and durability.

As mentioned above though, keep a regular defrost, even it its once daily

Shall try and set it to defrost once a day about 2am. The chocolates don’t like to get too warm.
