  • A surfeit of lemons – what to do with them?

We’ve got a lemon tree that’s got at least a hundred fruit on it, just coming ripe. What can we do with them? I’m thinking limoncello, anyone got any tried and tested recipes? I’ve tried stuff made by mates which is just vodka with lemons steeped in it for ages, then sugar syrup added. Tasted like what I imagine lemon-scented toilet duck tastes like.

Open to other ideas too. Lemon marmalade’s a non-starter as we also have orange trees and much prefer orange marmalade…

per 70cl of vodka, zest (yellow bit only, no pith) about 4-8 lemons. add sugar to taste (most folks like it VERY sugary). steep for about 4-6 weeks.

Scrumfled – cheers, well give that a try.

Why not salt some to preserve them for later in the year

Tarte au citron, sorbet, lemon drizzle cake
You could freeze some of the juice in ice cube trays for later use–it’s v useful for loads of recipes

Preserve them and then get all middle eastern once they’re ready.

    I used to make limoncello.

Pretty easy and a nice thing to do, but never really got round to drinking much of it. Especially once I stopped smoking and could taste it properly.

Good to give little bottles as gifts though.

Interesting, didn’t realise you could preserve fruit in salt. Not sure I’ve got any recipes calling for preserved lemons, but might make some out of curiosity.

Home made lemonade is lovely, that’s what I’d do if I had a tree. They keep on the tree for a while don’t they?

+1 Preserved lemons, also good to give away as gifts in a nice kilner jar.

Lemon rind also used to make elderflower cordial, so you go out and pick some flower heads as well?

Chapaking – kinda my point! I’ve had ‘proper’ limoncello and thought it was quite nice. Homemade stuff, not so much.

    Lemon sorbet sounds good too.

It’s quite easy to get homemade version tasting as good or better IME – just gone off it though I suppose.

I think it’s nice as a sharpener at the end of a big Italian meal, but even the proper stuff doesn’t taste so good to me at home.

Come on, it’s the internet. People aren’t going to abuse it by putting silly things on it.

Nobody mentioned Gin and Tonic yet?!

Lemonade is a good call IMO. If a local school has a fete coming up you could donate a load for them to make and sell lemonade.
